A guest opens a tonic in their kitchen in London or Singapore, and what their hand reaches for is not the supermarket label. It is what you served them on the terrace, facing the lake. That memory cannot be bought — it is composed, quietly, in the bar, the suite, the gifting protocol.

A signature spirit is one of the last gestures of hospitality that creates a memory tied to a single address. A glass in the lounge. A bottle in a suite. A round at the aperitif by the pool. None can be served by the house next door — because no other house will have access to it.

The brief

A house gin, not a private label

A leading wellness-luxury group — active in Asia, Europe and the Alps — commissioned a proprietary gin to anchor the cocktail menu of its houses. The mandate was precise: not a re-labelled bottle, but a true signature reflecting the wellness DNA — botanically structured, without heat, designed to be served neat or in a signature cocktail.

Botanically structured · cold distillation

Cold vacuum distillation preserves the aromatic compounds that traditional stills destroy through heat. The expression is closer to a fine eau-de-vie than to a London Dry — designed to deliver flavour at a low perceived ABV, aligned with a wellness positioning.

The process

Three tastings · from brief to bottle in weeks

Three rounds of tasting between the master distiller and the group's beverage direction refined the botanical architecture. From the first micro-distillation to validated production: less than six weeks, with no inventory commitment.

The result

Repeat orders, on-bar excellence

The head bartender reports that the expression became the anchor of the cocktail programme within weeks. Guest reception was strong enough to generate repeat productions — the clearest commercial signal that a signature is doing its job.

A note on technique

Cold vacuum distillation. The method of the Roca kitchen.

Most distilleries run copper stills — high heat, large volumes, with the loss of aromatic finesse that follows. We distill under vacuum at low temperature, the technique developed in the kitchen by El Celler de Can Roca, Mugaritz and Alinea to preserve the volatile compounds that heat destroys. Different chemistry, different result. Available on request for the technical conversation.
